Shrove Tuesday

It's pancake Tuesday. There's a more liturgical name but its not quite so interesting or delicious so in honour of this day when we can simply go all out and use up the leftovers before we focus on Lent and a more frugal time, here's my recipe for banana pancakes. Perfect for gluten free diets so they must be good for you.

 

Take one banana and mash it up.

 

Take one egg and scramble it into the mashed up banana.

 

Take a small ladle full of mix, pour into frying pan or griddle and cook.

 

And that's it.

 

Easy.

 

Make Lent easier because you can probably legitimately eat them throughout lent as they contain no sugar or chocolate.

 

Tomorrow we'll do something a little more sensible but for now let's eat before we diet. It's good for the soul. There are a lot of banquets in the Bible...
